Monday Musings: Cinco De Mayo!

Happy Monday, friends. It is that time of year when everything seems to be taking me longer, when I am jonesing to be done with work and to be playing on the beach. The calendar complies with my desire for fun in the sun with a funtabulous holiday: Cinco de Mayo. While I am no chef (in fact I pretty much only make salad), I am lucky enough to be married to someone who loves to cook. This weekend I had a lot of work to get done, so he played house husband and cooked up a storm both nights. Yesterday I came home to find a Cinco de Mayo playlist pumping on Pandora and homemade chips sizzling in the fryer. Lucky gal? I think so. Of course, my brother was over (as always), so we had a "Three Amigos Cinco de Mayo." Good times.

To make your own chips, you start off by cutting up tortillas and soaking them in lime juice and salt.

Then fry them to golden perfection. They are thicker than regular tortilla chips, but have amazing flavor.

When they've cooled, dip in some homemade guacamole and pico de gallo.

And enjoy them with a delicious margarita (or a beer). 
Between courses, we decided to play Spanish...a language none of us speak. It was a slow game.
